Cheesecake is the dessert that we would love to eat every day. The toasty crust with the creamy consistency of the filling will always be a pleasure for all our senses. Now, the fun comes from one of the sweetest things in Latin America: Dulce de leche. This dulce de leche cheesecake is marvelous, and you know... it is easier to prepare than you might think.
What is Dulce de Leche?
From Latin America to the world, this creamy and butterscotch-colored dessert is made at a low temperature. Thanks to this slow process, it has a smooth and complex flavor. Annabella Dulce de Leche is made with water buffalo milk, and that is the secret of their color that comes not from the caramelization of the sugar but the browning of the lactose.
Dulce de Leche Cheesecake
Time: 25 mins /2 hrs baking and cooling
Serves: 8
Ingredients
For the crust
110 g of graham crackers
Tip: You can also change the flavor of the crust. Try chocolate chip cookies instead.
60 g of melted butter
2 tbsp of sugar
¼ tbsp of cinnamon powder
For the filling
600 g cream cheese
3 eggs
60 g of sugar
60 g of dulce de leche
350 g dulce de leche for the serving
Preparation
Tip: Make sure your ingredients are room temperature to avoid lumps,especially the cream cheese.
For the crust
Preheat oven to 325 F°
In an electric mixer or in a food processor put the butter, the cookies, the sugar, and the cinnamon.
Grease the bottom and the sides of a springform pan with butter so the cheesecake will not stick to the pan.
Spread the cookie mix in the pan and press down to make it compact.
Take the crust to the oven for 7 to 10 minutes, and then let it cool.
For the filling
In an electric mixer put the cream cheese and mix with the 60 g of Annabella Dulce de Leche; then, add the sugar and add the eggs, one by one, until all ingredients are combined.
Put the cheesecake mixture over the cooled crust.
Take it to the oven for 45-55 minutes. Do not open the oven door while baking. Also, you want the cheesecake to have a little jiggle in the middle, so do not overbake it.
Let cheesecake cool and drizzle the Annabella Dulce de Leche over the top.

How to preserve your cheesecake with dulce de leche?
First, allow cooling completely. If you want to freeze individual pieces of the cheesecake, slice them, and wrap them in plastic wrap. On the other hand, if you want to freeze the entire cheesecake, put a sturdy base underneath it. Wrap the cheesecake tightly in plastic wrap or aluminum foil and put it into the fridge.
