No ice cream machine? No worries! This dulce de leche ice cream does not need it; you will need just two ingredients. This no-churn recipe is as easy to prepare as delicious. Perfectly creamy and scoopable at any time. The texture of this ice cream is mind-blowingly smooth. One spoon will never be enough.
Dulce de Leche Ice Cream recipe
Time: 5 minutes preparation, 6 hours freezing
Ingredients
2 cups cold heavy cream (the higher the fat, the creamier your dulce de leche ice cream is going to be)
14 ounces of Annabella dulce de leche
Preparation
In a bowl, whip the cream to stiff peaks. You can do this with an electric beater. Do not over-mix it.
Tip: if you over-mix, If it turns grainy, stir in a tablespoon or two of cream until smooth.
Blend the Annabella dulce de leche into the whipped cream.
Tip: Dulce De Leche has its natural sweetness. For that reason, we do not add any sugar.
Spread the mixture into a loaf pan and cover with plastic wrap.
Freeze for at least 6 hours or overnight.
Scoop and enjoy!
Ideas & Variations
Feel free to add vanilla extract if you wish.
If there are no children around, add 1/4 cup of dark rum, not only for the great flavor it adds, but that is enough to prevent the ice cream from solidifying into permafrost.
You can add to the mix a pinch of sea salt or put it on top, very tasty indeed.
If your dulce de leche ice cream is too sweet for you, add a bit of brewed coffee or espresso. The bitterness of the coffee does a great job of cutting down some of the sweetness.
If you want, you can use low-fat cream, but it will give you ice crystals, which means your ice cream will be a bit icy.
You can create many versions by just adding one ingredient to the dulce de leche ice cream. For example, try adding one of these ingredients: matcha powder, cocoa powder, chocolate chips, ground cinnamon, orange blossom water, hot fudge sauce, almond extract, etc.
You can also add some bourbon or Irish whisky to the dulce de leche ice cream, just be sure this variation is only for adults.
Want to try something cool with your dulce de leche ice cream, how about an affogato dessert. Just put some scoops to a serving glass and pour a shot of hot espresso over.
How to preserve the dulce de leche ice cream?
There is no need to keep the ice cream on the pan, you can transfer it to a container in a fancy way.
Put some dulce de leche into a piping bag fitted with a large round tip.
Pour some of the ice cream into an ice cream container, or use individual ice cream containers in crystal.
Generously, pour the dulce de leche over the ice cream, then add more ice cream.
Continue alternating between the ice cream and the dulce de leche until you fill the container.
